My favorite all time application security first interview question is "Name three HTTP methods". It is an amazingly fast litmus test of the depth of someones web skills. Make sure you ask them to name the ones they do know. If they can't name more than 2 then they most likely haven't done more than use a browser. Chris, great questions.
